Chia Bowl

Ingredients

Chia Parfait

1 cup  almond milk

½ cup cucumber puree

½ cup chia seed

4 tablespoons maple (additional for building the bowl)

pinch of salt

Combine all ingredients and refrigerate for 36 hours.

Granola

1 cup old fashion oats

½ cup mixed nuts and seeds (walnut, papita, almond, sunflower seed, pecan, sesame seed etc.)

2 tablespoons maple syrup

1 tablespoon olive oil

1 teaspoon ground cinnamon (additional for building the bowl)

½ teaspoon ground nutmeg (additional for building the bowl)

¼ teaspoon ground clove (additional for building the bowl)

pinch of salt

Preheat oven to 375˚ F. Place all ingredients in a bowl and stir until thoroughly combined.  Spread out evenly on a baking sheet lined with parchment.  Place in heated oven and bake for 45 min stirring every 15 minutes or until golden brown and crisp.  Pull from the oven and continue to stir every 10 min until cool. 

Buy your favorite fruit and seasonal berries, peel, cut, pit, dice and slice as desired

…and now it is time to make the bowl.

Add a bit of parfait mix to the bottom of the bowl, layer on some granola mix, layer in a mix of the fruit. Sprinkle your spices and drizzle with maple. Then like turning the bowl into three slices of pie, fill 1/3rd of the bowl with parfait mix, 1/3rd with granola and 1/3rd with fruit. Sprinkle with spices, drizzle with maple and garnish as you like. (my favorite is edible flowers or acai coolie)
